Flo Brasseries deploys Maitre’D to Help Better Manage Restaurants

Maitre’D has successfully completed its second installation at one of the most prestigious fine dining restaurants in Paris, le Vaudeville. Situated opposite the Paris Stock Exchange, Le Vaudeville is part of the biggest and best known restaurant chain in France, Groupe FLO. With 173 outlets and 4 different concepts, FLO now owns the most well known traditional Bistrots in Paris with an estimated 35% market share for the entire French Capital. Among them La Coupole, Bofinger, Terminus Nord, names which have been the favourite haunt of some of the most world famous artists such as Jean Cocteau, and have a huge historical value in terms of décor and architecture. Each Brasserie has its own individual identity and theme as well as specialities.
But behind the scenes is a hugely successful organisation with a very efficient management team. Tried and tested methods for F&B management as well as aggressive but discreet marketing techniques, ensure the success of each outlet.
After over 20 years with its existing POS supplier, FLO decided it was time to look for a more effective solution, especially from a centralisation point of view. Some of the challenges were to provide a better menu management tool in order to secure the ordering process from the POS, offer a graphic Table Plan with visual alerts for speed and quality of service as well as an automated end of day process. Handheld devices are being trialed out on the terraces to increase efficiency and added value. But the defining factor was Maitre’D’s ability to provide a centralised solution with consolidated reporting facilities as well as enough flexibility to allow for the smooth management of multiple databases. Maitre’D was piloted earlier this year in one of the outlets and proved to fulfill all the criterias that the client was looking for in a new integrated solution.
